Life is a roller coaster, enjoy the ride.


WOW, a lot has happened sine I posted last.

The biggest thing -- I MOVED. yes moved.  I moved about three hours away from my amazing family for the only thing that could imaginably do so.  Yep. Matthew. I moved in with two wonderful people, Maddy & Nick who happen to be engaged, and some of Matthews best friends.

My typical day now consists of working, skiing w/ Matthew and his family, home to bed.  I feel like I'm on repeat but each and every day I feel so blessed to be out enjoying the water.  Not to mention each of our weekends our filled with weddings, showers, party's, ski tournaments.  This busy life is definitely draining but I keep reminding myself soon it will be too cold to ski, too dark to be outside late, and well boring.  So for now we're enjoying the ride.

Now that I'm officially a "big kid" paying my own bills and living away from home it's provided a whole new view on life.  One thing that has been  re instilled, cooking for myself with whole, healthy foods is MUCH cheaper than any other option out there.  Not to mention I can guarantee I won't be eating any gluten.


So the other day I made this super quick quesadilla with my very own Guacamole.  The whole thing taking less then a few minutes to prepare with all things I just happened to have in the kitchen.

Guacamole:

One avocado
One tomato (right out of the garden)
Lime
Garlic
Corn

Cut up the avocado placed in a bowl.
Sliced a piece off the lime and squeezed over avocado, mixed in.
Added a pinch of garlic, to taste usually works best.
Cut up the tomato, mixed in.
I also added some fresh corn right off the cob we had grilled the day before.

I put some on my quesadilla which was delicious for lunch and I even had enough left over for later.

Once again, I've slacked.

OH MY GOODNESS!

So Once again I stopped posting, but that doesn't mean I've stopped cooking :D

I have a few recipes that I"m COMMITTED to sharing.  They are so delish and G-Free so how Could I not?


First things first!
My sister graduated, receiving her bachelors degree in Recreation Management!



So obviously we had to have a party! Well my family rocks because it was gluten free, yes, EVERYTHING was gluten free! There was even two desserts I could eat! I mean, when have you been to a party where you could eat everything?

What did we have you ask? A Taco Bar! Which included the works; hard shells, Frito's, and nacho chips.  Meat (with gluten free seasoning of course), all the veggies you could ask for, guacamole, cheese dip, rice, pinto beans and a lot of other amazing things including monster bars and scotcharoos for dessert.

Plenty of recipes to come from this fab party!
